"Magic" Breakfast Cookie Recipe

The “magic” ingredient that makes these cookies a home run is fiber. Fiber is a carbohydrate that the body cannot fully digest or absorb, making it a powerful tool for controlling appetite. Avocado (don’t worry - picky eaters won’t have any idea that something green is hiding inside these cookies), whole grain flour, rolled oats, chia seeds, and walnuts provide long-lasting energy, healthy fat, protein, and fiber.
Magic Breakfast Cookies -Makes 16 large cookies-
Ingredients
2 small mashed avocados (approximately 1 cup)
1/4 cup honey
1/2 cup brown sugar
2 large eggs
1 tsp vanilla extract
1 1/2 cup whole grain flour
2 cups whole oats
1/2 cup cocoa
1/2 cup chia seeds
1 tsp salt
1 tsp baking soda
1/2 tsp baking powder
1 cup halved walnuts
1/2 cup dark chocolate chips (optional)
Instructions
Preheat oven to 325-degrees, and prepare two baking sheets with parchment paper.
In a large bowl beat mashed avocado, brown sugar, honey, and vanilla extract until creamy.
Add eggs one at a time, beating well after each addition.
In a separate bowl combine flour, oats, cocoa, salt, chia seeds, baking soda, baking powder, and salt.
Gradually fold dry ingredients into the wet ingredients until just combined.
Add chocolate chips and walnuts to the dough and mix until evenly distributed.
Using an ice cream scoop or large spoon, place cookie dough on baking sheets evenly spaced. Each sheet should accommodate approximately 8 cookies.
Using the back of a fork, gently flatten the top of each cookie.
Bake for 15 minutes until firm.
Let cool at room temperature before eating. Cookies may be stored in an airtight container in the refrigerator for up to one week, or in the freezer for up to 6 months.
